Tonight I needed something fast for dinner. I was browning chicken in a fry pan when I realized I didn't have enough tortilla's for everyone. Looking thru the fridge and pantry for something to use as a shell or wrap for the tacos. I barely had enough tortillas for the kids so I took a bag of Dorito's, lunch size, smashed them & dumped in everything for a taco salad! I think the kids were jealous!
A little big of cilantro, chicken, cheese, lettuce, a spoonful of homemade salsa and of course the Dorito chips! Yum!
Today was definitely a Monday!

Bugs & BBQ
I'm so excited Spring will officially be here Wednesday! My hubby was up late last night BBQing chicken. He was craving chicken. I don't know why but it wasn't raining and he BBQ'D chicken. He grilled hamburgers and hot dogs for dinner. I guess it's a guy thing, something to do when you have time off from work. He needs to grill up something besides chicken! Chicken seems to be the choice of meat to be BBQ'D these days!
Tonight for dinner my 6 year old daughter ate more than her brothers, just turned 5, 14 and 16.5. She must've been craving chicken for dinner.
I haven't been feeling well this weekend. Something bit me multiple times, mostly on my arms and stomach. I guess we can say I've been itchy. I'm not sure if it is spiders or fleas. I washed all the bedding, vacuumed and still got eaten alive. My awesome hubby drove to the store last night to buy me some much needed Benadryl. Relief. The only thing I've been using that gets rid of the itch. I did take a good nap and been really tired still.
What do you use for bug bites that works??

Hawaiian Chicken
My oldest BBQ'D this chicken last week. It turned out pretty tasty. The recipe comes from Pintrest. Come pin it here from me and find the recipe here. This does a lot of chicken. I cut the liquid in half. Half the water, half the soy sauce. I did use half soy sauce and half teriyaki soy sauce. It was delicious! Oh my mouthwatering fabulous! LOVE!
Grilled on the BBQ. Yum! The picture looks a little bit dry. Nope. The grill marks added the perfect flavor. This is definitely a recipe for the grill and not for the oven. I would totally make this again!

BBQ Chicken Dinner
I hope everyone had an awesome Holiday Monday. My husband loves to BBQ. I love to eat it! Here in the Pacific Northwest we have been freezing so we haven't been outside using the grill. My husband will, but I wont. Not in the freezing cold when it hits 21 degrees during dinner time. Here's my indoor, use the oven to warm up the house and avoid the outdoor cold, but still enjoy some finger licking good BBQ! This is my recipe, something I know my kids will eat!
Here we go!
BBQ Chicken Recipe
1 bag of chicken wings/drummettes, frozen
1 bottle of BBQ sauce - I like to use Sweet Baby Ray's brand
handful of brown sugar (approx 3/4 cup)
1 can pineapple, drained (optional - can be made with or without it)
Directions:
Preheat oven to 400 degrees. Place chicken in pan, sprinkle brown sugar over chicken, now is the time to add the pineapple if using, then squeeze BBQ sauce all over on top. Bake in oven. Every oven cooks differently, it will take 1+ hours to bake. Turn chicken about every half hour spooning sauce over it. When chicken is blackening on top it is done!
Whip up some corn bread too! Perfect with BBQ!

All my kids gobbled this up! They were starving! The hubby gets dinner when he gets home from work! Ahh, the cornbread, I think I'll go have another piece before it disappears! YUM!
